GBMC Cook Heads To The Olympics

For athletes, making it to the Olympic Games is often a career highlight. But for every athlete, there are hundreds of people behind the scenes.
As
Mike Schuh reports, one of them lives in Charles Village and works in Towson.
Sixty employees keep the cash register ringing 44,000 times a month at the GBMC cafeteria.
It's a lot of responsibility to keep all the patients, employees and visitors well fed. It's Matt Sercombe's responsibility, the chef who runs the kitchen at GBMC.
A chef for 20 years, he's been at GBMC for two-and-a-half years.
Putting out thousands of meals each day may soon seem tame.
"I'm going to Beijing, China for a three-month stay," Matt said.
His employer, food giant ARAMARK, has already built state-of-the-art kitchens and is importing most of the food. ARAMARK asked for 7,000 volunteers.
In China, Matt will supervise and cook. He will help as ARAMARK serves an expected 3.5 million meals throughout the duration of the Olympic games and Paralympic games in the Olympic Village, two Media Centers and two Media Villages, providing catering services for about 60,000 guests.
"I want it to be good food," he said.
Though the games don't begin until August, Matt is leaving on Tuesday.
Married without kids, he'll use the Internet to keep in touch.
"Three months is a long haul that's for sure," he said.
As a treat, after both sets of games are over, Matt and his wife are meeting in Bangkok for a vacation.
